Colorful peppercorns are the seeds of black pepper (Piper nigrum), a climbing plant. Black pepper seeds are obtained by drying immature seeds in the sun and then fermenting them. As a result, they acquire a black color and have the most spicy taste and pungent aroma among pepper seeds. White pepper is ripe seeds that are boiled for a short time, then soaked in sea water and dried. After drying, these seeds are removed from the casing. They are more delicate in taste than the previous ones. Green pepper is immature seeds that are dried at low temperatures and not in the sun, so that they do not lose their color. They are delicate in taste. Red beans are ripe black pepper seeds, also known as pink pepper.
Pepper owes its spicy, spicy flavor to the presence of piperine alkaloid. There is also a lot of aromatic pepper oil in peppercorns.

Health benefits of pepper seeds
Piperine (alcoloid) causes increased secretion of digestive juices, which shows slimming properties, as it accelerates fat burning. This alkaloid also has a diuretic effect, detoxifies the body and increases its immunity, has antioxidant and therefore anti-carcinogenic properties. It has also been shown that pepper has antipyretic, diaphoretic and diastolic properties. Regular use of pepper causes a drop in blood pressure. Piperine significantly increases the absorption of curcumin, a very strong anti-inflammatory substance present in turmeric. It also causes increased absorption of various minerals (selenium) and vitamins (A, B, C), coenzyme Q10.
People with stomach ulcers should use pepper in moderation as it can irritate the mucous membranes.
Substances found in pepper seeds
Pepper grains contain, among others:
- piperine (alkaloid) with the properties listed above
- terpenes (eugenol, camphene, myrcene, terpinenes) - with anesthetic, antiseptic, anti-inflammatory, relaxing, sedative properties
- saturated fatty acids (lauric, myristic), which help with weight loss, are easily absorbed
Use of pepper
Pepper grains have been used in the kitchen as a seasoning added to soups, broths, bigos, and meats. Pepper is also used in the production of pepper spray and some pesticides. In cosmetics, pepper has a peeling, skin whitening and anti-dandruff effect. Pepper oil used externally helps with rheumatic problems. Pepper is also a very good preservative.
