Lime honey is a nectar honey obtained from melliferous broad-leaved and small-leaved linden. Bees produce it in June and July. Liquid linden honey is yellow or yellow-green and after crystallization it is yellow-orange or cream. The taste is a bit spicy, sour, very slightly bitter and with a linden aroma.
Lime honey ingredients
Lime honey contains mainly simple sugars (fructose and glucose) in the amount of approx. 74%. We will also find essential oils, flavanones (hesperidin), flavonols (rutin, quercetin), phenylpropenoic acids (coumaric, coffee and its ester, i.e. chlorogenic), tannins (flavanol tannins), glycosides (thilacin), vitamins such as C, from group B, minerals (the most potassium).
Properties of linden honey
Lime honey has strong antioxidant, anti-cancer and anti-inflammatory properties. It also has quite strong antibacterial properties, acting like an antibiotic that fights even staphylococci. This is related to e.g. with the presence of polyphenols (more precisely flavonoids), which are the most abundant here compared to other honeys. Linden honey is used for colds, upper respiratory tract infections, flu, pneumonia and bronchitis. Antipyretic, diaphoretic, antitussive, expectorant. Linden honey is also helpful in cardiovascular diseases, slightly lowers blood pressure, has a calming and antispasmodic effect. Helps with insomnia, in neurotic states. It is also used in urinary tract, rheumatic and digestive system problems.
Use of linden honey
It should be eaten as an addition to, for example, bread, but also added to oatmeal and various desserts, but at a temperature not exceeding 40 degrees C because then it loses a number of health properties. It is best to use it by pouring a spoonful of honey with a glass of cooled, boiled water in the evening and drink it after adding lemon juice (or even ginger) right after waking up in the morning.
