Roasted pistachios 500g Targroch

Pistachios are the seeds of the Pistacia L. plant, which grows in the warmer climate of the northern hemisphere. These seeds are contained in a hard shell that cracks when the seeds are ripe. They have been known since antiquity  and were popularized by the Romans. They are not only very tasty but also healthy, as they contain many valuable vitamins, minerals and other antioxidants. They contain plant forms of vitamin A, i.e. lutein and zeaxanthin. Pistachios also contain large amounts of potassium, phosphorus, magnesium and calcium, vit. E (in the form of a valuable form of ɣ-tocopherol), B vitamins (especially niacin and pyridoxine). They can be successfully consumed by diabetics, because they have a low glycemic index of 15.

Polyphenols present in pistachios

The following polyphenols are present in pistachios: phenolic acids (mainly gallic and protocatechuic), stilbenes, lignans and flavonoids such as anthocyanins, flavanols (tannins, proanthocyanidins, catechins, epicatechins), flavonols (quercetin), flavones (luteolin).

 

Kitchen use

You can eat pistachios directly, because they are tasty, sweetish. They are suitable for baking or as an addition to ice cream. Can be eaten roasted and salted. Pistachio butter is also great.
